3 medium-sized firm mangoes
1 cup of sugar
1/2 cup of water
300g of crystallized sugar (about 1 1/3 cups)

Peel the mangoes, cut them into quarters and remove the pit
Cut each quarter into 4 slices
Heat the sugar and water over medium heat, stirring until dissolved
Place 12 slices of mango and cook, flipping them occasionally until they're coated in a layer of sugar
Turn off the heat
Remove with a spatula and place on parchment paper
Repeat the process using 12 slices at a time
Let it cool for 24 hours
Dip each slice in crystallized sugar and let it dry for 24 hours
Wipe each slice with absorbent paper and dip in crystallized sugar again, letting it dry for 24 hours
Change the parchment paper after each layer of sugar
Repeat one more time
You should end up with 36 slices
If desired, perfume the caramel with cinnamon or orange peel.
