Mix the flour with the coconut and the butter with your fingertips until a coarse crumb forms
Add the lime zest
Place the crumb mixture on a surface, make a depression in the center, and add the egg
Mix with a fork, allowing the crumb to fall over the egg to form a paste
Combine everything and shape into a dough, adding more flour until it's smooth and easy to handle from your hands
Roll out the dough on a lightly floured surface to fit a 21 x 33 cm rectangular pan (add a little extra flour to the rolling pin for easier opening)
Cover the dough with grapefruit strips and bake in a preheated oven at 200°C for 20 minutes or until golden
Remove from the oven, cut into squares while still warm, and let cool
Make about 30 crackers
