4 ears of green cornmeal
2 cups skimmed milk
1/2 cup water
1 envelope (12 g) flavorless gelatin
1/2 cup powdered sweetener with aspartame
Cinnamon to taste for dusting

Cut the corn kernels from the cobs, leaving no more than 1 inch of cob attached
Transfer the kernels to a blender, add milk and blend until smooth
Strain through a fine-mesh sieve, discarding any solids left behind
Heat the liquid in a saucepan over low heat, stirring constantly, for 15 minutes or until it thickens slightly
Allow to cool
In a refrigerator, mix water with gelatin and let it sit for five minutes
Dissolve over low heat in a double boiler and add to cornmeal cream
Add powdered sweetener and blend well
Transfer the mixture to individual serving dishes or small ramekins, dusting with cinnamon
Let cool completely before refrigerating for at least 2 hours or until firm
Serve.
