Heat a large skillet over medium heat
Add 1/4 cup of oil or butter
Reduce heat and add 1 cup of black beans
Mash well
Add the garlic and mix well
Add the remaining black beans, adding 1 cup at a time and mashing well after each addition
Reduce heat to low and let cook, stirring until a paste forms
If too dry, add a little of the cooking liquid
Season with salt to taste
Serve in 6 portions
Dust with grated fresh Minas cheese
