1/2 kg of white beans
2 tablespoons of salt
pepper to taste
1 clove of garlic
1 sprig of rosemary
6 tablespoons of butter or margarine
2 medium-sized onions, finely chopped
1 green pepper, finely chopped
3 tomatoes, peeled and finely chopped
1/2 teaspoon of oregano
1/4 cup of fresh parsley, finely chopped
1/2 kg of white beans

Place the white beans in a bowl and cover with water
Cover and refrigerate overnight
Drain the next day
Place the beans in a pot and cover with 5 cups of cold water
Add the salt, pepper, garlic, and rosemary
Bring to a boil
Reduce heat and simmer for about 2 hours or until the white beans are cooked
Stir occasionally during cooking
Drain
Melt 4 tablespoons of margarine
Fry the onion until it browns (about 5 minutes)
Add the green pepper and tomato
Simmer for 5 minutes
Add the oregano and parsley
Mix in the remaining butter and add to the drained white beans
Serve hot, garnished with fresh parsley.
