2 cups cooked pink beans
2 cups cooked white beans
1/2 cup chopped green pepper
1/2 cup finely chopped onion
4 cloves garlic, minced
6 tablespoons olive oil
2 tablespoons fresh parsley
1 tablespoon dried oregano
salt to taste
3 cups zucchini, cut into cubes
4 tablespoons grated Parmesan cheese
salt to taste

Sauté the green pepper, onion, and garlic in a skillet
Add all other ingredients, including the beans, and season with salt
Bake for 30 minutes in a moderate oven (170°F) in a covered baking dish
Remove the cover, sprinkle with Parmesan cheese, and return to the oven until golden brown
Serve hot.
