2 tablespoons olive oil
2 large onions, chopped (300 g)
5 cloves garlic, minced
500 g of beef, cut into small pieces
200 g of smoked ham, cut into small pieces
1 Portuguese sausage, sliced (300 g)
4 sprigs of rosemary
Salt to taste
2 pounds black beans (500g)
400 g of lean pork, cut into pieces
2 tablespoons olive oil
2 large onions, chopped (300 g)
5 cloves garlic, minced
500 g of beef, cut into small pieces
200 g of smoked ham, cut into small pieces
1 Portuguese sausage, sliced (300 g)
4 sprigs of rosemary
Salt to taste
Wash the black beans and place them in a medium bowl
Let them soak in the refrigerator for 12 hours
Drain the black beans
In another bowl, do the same with the lean pork
In a large pot, combine all the ingredients except for the black beans and braise, stirring occasionally, for about 20 minutes
Add the drained black beans and bring to a boil
Then reduce heat and simmer for about 1 hour and 30 minutes, or until the beans are tender, adding hot water as needed to prevent drying out
Serve hot.
