One 750g piece of fidgeo

Salt and pepper to taste
4 slices of bacon

Brush the fidgeo with olive oil
Mix together the vinegar, parsley, salt, pepper, and let the fidgeo sit in this marinade, in the refrigerator, for a day or two
Remove from the refrigerator and let it rest for 1 hour
Place it in a baking dish and cover with bacon
On top, place the rings of onion from the marinade
Bake in a moderate oven for about 40 minutes, basting occasionally with the pan juices
Serve 4 to 6 portions.
