12 oz beef, sliced into 1/2 inch thick strips
to taste pepper
4 tablespoons all-purpose flour
4 tablespoons butter or margarine
to taste salt
2 large potatoes, peeled and cut into 1/2 inch thick slices
2-3 large onions, cut in half and sliced
4 tablespoons olive oil
12 oz beef, sliced into 1/2 inch thick strips

Cut the beef against the grain and season with pepper
Dredge the beef in flour, shaking off excess
Heat 2 tablespoons of butter or margarine in a skillet over medium-high heat
Add the beef and cook for 2-3 minutes on each side, until browned and cooked through
Season the beef with salt to taste
In a separate pan, melt 1 tablespoon of butter or margarine over medium heat
Add the potato slices and cook until they're soft and golden, about 5 minutes
Arrange the beef on a platter and top with the potatoes
Heat 1-2 tablespoons of olive oil in a skillet over medium-high heat
Add the sliced onions and cook until caramelized, stirring occasionally
Place the onions over the potatoes and serve hot, accompanied by mashed sweet potatoes or green beans
Serve immediately.
