1.5 lbs of chicken thighs

2 tablespoons of hot sauce
a few drops of vinegar

Fry the chicken thighs lightly in butter or margarine, over high heat, until golden brown
Remove the chicken from the skillet with a slotted spoon and place it in individual ramekins
Keep the chicken warm
Add the chopped green onion to the skillet liquid and fry until caramelized, stirring constantly
Add the white wine and cook at high heat, reducing the liquid by half
Beat the heavy cream until thickened and add English mustard, hot sauce, and vinegar
Beat this mixture until smooth and spoon it over the chicken
Bake in a preheated oven (220°F) until golden brown
