Separate the garlic cloves and peel them
Chop half of the garlic and reserve the rest whole
Season the chicken with salt to taste and reserve
In a large skillet, heat two tablespoons of olive oil and brown the chicken pieces on all sides
Transfer to a baking dish and drizzle with remaining oil
Sprinkle with minced garlic and fresh herbs and arrange the whole garlic cloves
Cover the baking dish with aluminum foil and bake in a medium oven for approximately 1 hour and 30 minutes.
