Wash the figs and let them drain
In a bowl, mix together the cinnamon and cardamom
Pass the figs through this mixture
Let them dry on a mesh sieve
Prepare a caramel sauce by melting the sugar in a medium-sized pan over low heat
Stir constantly, adding a little hot water to the caramel until it separates from the bottom of the pan without becoming too dark
Cover the figs with the caramel
Serve with lemon sorbet.
