Preheat the oven to 250°C (very hot)
Trim the fillet ends and rub it all over with salt and pepper
Place the onion in a baking dish and arrange the fillet on top, brushing it with butter from all sides
Leave it to roast for 30 minutes
Flip the meat and continue roasting for another 20 minutes or until desired level of doneness (rare or well done)
Remove the fillet from the baking dish and place the pan juices with onion and milk in a blender
Blend until smooth
Slice and serve with the meat
Serve warm, 12 servings.
