1 piece of filet mignon, 600g
Olive oil (for brushing)
1 large onion, finely chopped
1/4 cup butter
1 tablespoon Worcestershire sauce
1/4 cup dry red wine
500g fresh mushrooms (champignon)

Cut the filet into 10cm pieces in the direction of width
Cut each piece in half lengthwise (photo)
Season with salt and pepper, then brush with olive oil
Sauté the onion in butter over low heat until golden brown
Add Worcestershire sauce and cook for 1 minute over high heat
Add the red wine and stir well
Add the mushrooms, season, and remove from heat when the liquid comes to a boil
Heat a skillet, preferably cast iron, over medium-high heat
Cook two or three filets at a time to your desired level of doneness and serve immediately with the mushroom sauce
