Clean the meat and, if desired, tie it with twine for a nice shape
In a blender, blend the wine, water, garlic, onion, thyme, salt, black pepper, salsa, and scallions green
Pour over the meat and let it rest for some hours
Remove the meat from the marinade
In a large skillet, melt the butter with oil over high heat
Place the meat in the skillet and fry, turning occasionally, and seasoning gradually, until it reaches your desired point
Remove from the heat and place the meat on a kitchen board
Remove the sauce from the skillet, scraping the bottom with a wooden spoon
Place in a pot, add the English-style sauce, warm, and serve in a gravy boat
Cut the meat into slices and serve with the sauce.
