Remove the skin and bone from the chicken breast and cut it in half lengthwise
Cut each piece horizontally into four cutlets
Cut them in half again, forming eight smaller cutlets
Use the filet too

Mix together salt, black pepper, and one tablespoon of grated lime zest
Season the chicken with this mixture
Place a slice of cheese on top of each piece and press down

Beat the eggs lightly
Carefully pass each cutlet covered in cheese through the beaten eggs and then into the bread crumbs
Heat the oil in a pan over high heat
Fry the cutlets on both sides until they are well browned

Heat the oven to medium temperature

Remove and let them drain on paper towels
Keep them warm in the off-oven for not to cool down
When serving, sprinkle the remaining lime zest on top.
