1 chicken breast

3 tablespoons of salt

200g of Minas cheese, sliced

Remove the skin and bones from the chicken breast and cut it in half lengthwise
Cut each piece horizontally into four cutlets
Cut each cutlet in half to form eight smaller ones
Mix together salt, black pepper, and lemon zest
Season the chicken with this mixture
Place a slice of cheese on top of each cutlet and press down gently
Beat the eggs lightly
Carefully dip each coated cutlet into the eggs and then into the breadcrumbs
Heat the oil in a skillet over high heat
Fry the cutlets on both sides until they are golden brown
Remove from oil and let drain on paper towels
Keep warm in an oven set to medium temperature
