Cut 6 large squares of aluminum foil
Divide the well-washed spinach leaves into 6 portions and place on the aluminum foil
Divide the fillets into 6 portions and place over the spinach
Moisten each portion with a little coconut milk and season with salt and pepper to taste
Fold the aluminum foil very tightly so that no steam escapes
Bake in a moderate oven for about 45 minutes.
