2 cups coconut milk
4 white fish fillets, medium 150g (cod, hake, badejo)
2 tablespoons chopped onion
2 tablespoons fish sauce
4 red bell peppers cut
5 mint leaves

Heat the oil, add the curry paste and stir for 5 minutes over medium heat
Add a bit of coconut milk, mix well and let it simmer
Place the fish and let it cook in the sauce, flip the fillets to brown both sides
Reduce the heat to cook slowly and join the onion and fish sauce
Garnish with red bell pepper and mint.
