1 kg of crab meat or, if preferred, shrimp;
2 tablespoons of olive oil;
6 eggs;
1 finely chopped onion;
2 tomatoes cut into pieces;
2 cloves of garlic;
1 handful of chopped parsley;
Red pepper flakes and olive oil to taste;
Lemon,
Vinegar,
Salt and tomato extract to taste

Rinse and clean the crab meat to remove any shell fragments
Sauté the onion, tomatoes, and all seasonings in olive oil
Add the crab meat and let it cook for a little longer
Beat the egg whites until fluffy, add the yolks and place 2/3 of this cream into the sautéing mixture off the heat and mix
Place it in a baking dish, cover with the remaining eggs and garnish with onion rings and olives
Bake at a low temperature until golden brown
Serve hot.
