Season the chicken breast cutlets with salt and pepper
Dredge the seasoned chicken in the flour, then the beaten eggs, and finally the chopped pecans
If necessary, use more flour, eggs, and pecans to coat all the cutlets
Fry the coated chicken cutlets in butter or margarine until they are golden brown on both sides
Remove the fried chicken from the skillet and keep it warm
In the same skillet where you fried the chicken, fry the sliced mangoes until they're heated through
Fry quickly, only to warm them up
Serve with the fried chicken cutlets
If necessary, add more butter or margarine to fry the mango
Serve 4-6 portions.
