Juice of 1 lemon
2 tablespoons olive oil
1 cup chicken broth
1 onion, finely chopped
1 tablespoon grated lemon zest
Salt and black pepper to taste

Marinate the fillets in lemon juice, salt, and black pepper
Let them rest for 15 minutes
Strain and reserve the lemon juice
Heat the olive oil in a skillet and cook the fillets until browned
Set aside the cooked fillets
In the same skillet, add the reserved lemon juice
Stir well with a wooden spoon to release all the sediment from the bottom of the skillet and add the chicken broth and onion
Let it simmer for five minutes
Brush the fillets with this sauce and serve sprinkled with grated lemon zest.
