Season the fish fillets with salt and black pepper, arrange them in a baking dish and bake in a moderate oven (170°C) for 10 minutes
Blend the onion, garlic, white wine or tomato juice, parsley, and mint in a blender until smooth
Pour this mixture over the fish fillets and bake for another 20 minutes, or until the fish is cooked through.
