2 medium onions, finely chopped

8 cod fillets
to taste salt
2 tablespoons lemon juice
1 bunch of spinach, cleaned, blanched, drained, and chopped
1 can or container of tomato puree
2 tablespoons chopped sausage

Sauté the onion in butter until it's soft but not golden brown
Season the fillets with salt and lemon juice
Spread a little spinach over each cod fillet and sprinkle with onion
Roll up
Place in a refrigerated baking dish
Pour tomato puree over the top and sprinkle with chopped sausage
Bake in a moderate oven (170°C), preheated, for about 40 minutes
Serve hot.
