Clean the fish fillets with a damp cloth or paper towel
Season with salt and pepper
Mix together the carrots, parsley, red bell pepper, 1/4 cup of melted butter, bread, and onion
Stir well to taste
Spread this mixture over the fish fillets and roll, starting from the narrower side
Secure with toothpicks
Place in a shallow baking dish greased and brushed with melted butter
Bake at moderate temperature for about 30 minutes
Do not let it brown
Let it rest for 4 portions.
