Season the beef with salt and black pepper to taste (it's best if it's quite spicy)
Braise in a low heat pan with olive oil and a little bit of garlic
Prepare the gorgonzola sauce with some sprigs of thyme
Melt the cheese in a little milk with onion and sauté
When the beef is cooked to your liking, cover it with the sauce and serve.
