Season the beef fillets with half the salt
In a large frying pan, melt the butter and oil over high heat
Fry two beef fillet portions at a time until they're browned (about 2 minutes per side)
Transfer to a baking dish and reserve
Add the potato and remaining salt to the frying pan and fry, stirring constantly, until the potato is tender (about 5 minutes)
Arrange the beef fillets on top, sprinkle with green peppercorn, and heat for about 1 minute
Distribute the beef fillets among four plates, placing two in each one
Sprinkle with parsley and place the potato alongside
Serve immediately
