3 limes (juice only)
5 cloves of garlic, minced
1 cup of white wine

100 g of bacon, diced

2 cups of simple vinaigrette (tomato, onion, chopped parsley, pepper, olive oil, vinegar, and salt)
Jambu Rice
4 bunches of jambu
2 cups of rice (400 g)

1 small onion, finely chopped

If you can't find the ingredients, the chef proposes replacing the pork chops with surubim or dourado, the black beans with fradinho, and the jambu with broccoli.

Pork Chop Skewers

Cut the meat into 50-gram pieces and wash in running water

In a glass bowl, mix lime juice, garlic, white wine, olive oil, salt, and enough water to cover the meat
Add the meat, cover with plastic wrap, and refrigerate for 6 hours
Then drain and pat dry with paper towels
Next, heat a grill or griddle brushed with olive oil
Assemble each skewer with four or five pieces of pork, alternating with tomato, onion, and pepper
Coat in wheat flour and grill, turning occasionally, until browned

Heat a pot or pan greased with olive oil
Add the black beans, bacon, and water
Cook until the beans are slightly tender
Drain, let cool, and mix with vinaigrette

Wash the jambu and quickly blanch in plenty of cold water with 1 tablespoon of salt
Drain, but reserve the water
Cover the greens with ice-cold water, drain again, and chop

Heat a pot or pan greased with olive oil
Cook the rice in reserved water until tender
Cut the garlic into thin slices and fry in olive oil with onion until golden
Add the jambu and simmer for 5 minutes
Season with salt
Serve the pork chops with jambu rice, black bean salad, and farofa or manioc flour.
