30 egg yolks
2 tablespoons of vanilla
1 kg of granulated sugar
3 teaspoons of water

Strain the egg yolks through a wire mesh
Add the vanilla
Combine the sugar and water over low heat, stirring until the sugar dissolves
Using a funnel or piping bag, place the egg yolks onto the hot syrup in a thread-like shape
Just before removing the threads from the syrup, splash with a little cold water
Place the threads into a colander lined with cheesecloth that has been wet
Before making new threads, allow the syrup to come to a boil again
When the syrup is becoming too thick, add a little more water
Once the threads are ready, open them up using two forks and place onto a serving dish
If desired, brush with a little of the syrup
