Mix the sugar into the water and bring to a medium heat, stirring until the sugar dissolves
Don't stir any more and let it simmer until you reach the string stage (put a small amount of the mixture between your thumb and index finger and pull them apart; it should form a thin thread)

Maintain the mixture at low heat, position the funnel 5 cm above it, and place small dollops of egg yolk
Makes circular motions with the funnel to allow the strings to form over the simmering mixture

When they're firm, remove them with a skimmer and transfer them
to a strainer

Immediately submerge the strainer in a bowl with warm water
and let it drain
