4 ripe avocados
1 and 1/2 envelopes of flavorless gelatin
1/2 cup (challah) of cold water
1 cup (challah) of chopped parsley
1 tablespoon of lime zest
2 cups (challah) of sugar
1 can of chilled heavy cream
3 egg whites

Blend the avocado in a blender and set aside
Hydrate the gelatin with cold water and place it in a warm water bath until dissolved
Remove from heat and add the avocado and parsley
Mix well
Add lime zest, sugar, and heavy cream
Mix well after each addition
Set aside
Beat the egg whites until frothy and fold them into the avocado mixture
Mix delicately and pour into a greased mold
Refrigerate until firm
Unmold and serve with strawberry sauce
