1 tablespoon of unflavored gelatin
1/4 cup of cold water
3 egg yolks, separated
1 tablespoon of grated lime zest
2 tablespoons of pineapple juice
1/2 cup of sugar
1/4 teaspoon of salt
2/3 cup of crushed pineapple in syrup
1/2 cup of whipped cream
1 tablespoon of unflavored gelatin
1/4 cup of cold water
3 egg yolks, separated

1/2 cup of sugar
1/4 teaspoon of salt
2/3 cup of crushed pineapple in syrup
1/2 cup of whipped cream
Soak the gelatin in cold water for 5 minutes
Beat the egg yolks slightly and add the lime zest, pineapple juice, sugar, and salt
Cook over low heat, stirring constantly, until the mixture thickens
Add the gelatin and stir until it dissolves, then add the pineapple and let it cool
When the mixture starts to thicken, add the whipped cream, beaten egg whites, and fold until no white streaks remain
Pour the mixture into a mold and refrigerate
When firm, unmold and garnish with pineapple
