Let the basic flan cool. Cover with a layer of gelato. Whip 3 egg whites with 6 tablespoons (of soup) of sugar to obtain the meringue point, place a little on top of each mold, covering the gelato. Bake in a preheated oven at 200°C for 5 minutes or until golden. Serve immediately.
