In a blender, combine cashew nuts, almonds, ginger, onion, and cilantro
Heat some olive oil in a skillet over medium heat
Add the mixture from the blender
Add the chicken, bay leaf, and garlic to the skillet
Cover and let it simmer
If needed, add a little water
Let it cook until the chicken is tender and golden brown
