Mix well the orange peel, hazelnuts, sugar, and flour
Add the heavy cream and mix with a spoon (1 tablespoon)
Place separate portions of the dough (about 2 cm) in a greased baking dish
Firm the dough with the back of a spoon to make it thin
Put it in a strong oven (200°F), preheated, for about 10 minutes or until golden brown
Remove delicately, still warm, from the baking dish and place on a plate
Let it cool
Melt the chocolate in a water bath
Apply the melted chocolate only to the smooth side of the florentine
Put it in the refrigerator for a few minutes to dry the chocolate
Run a fork under the chocolate to create the characteristic design of this sweet treat
