Mix together the orange peel, almonds, hazelnuts, and flour
Add in the heavy cream and mix well
Spoon (1 tablespoon) of the mixture into a greased baking dish, leaving 2 cm between each one
Flatten the mixture with the back of a spoon to make it thin
Bake in a preheated oven at 200°C for 10 minutes or until the edges are golden brown
Let cool slightly and carefully remove from the baking dish
Place on a plate to cool
Melt the chocolate in a double boiler and only apply it to the smooth side of the Florentines
Refrigerate for a few minutes until the chocolate sets
Run a fork over the chocolate design
Yields 16 units
