Mix the yolks and grated carrot well
Add the lemon zest and half of the flour
Mix well with a wooden spoon and add the remaining egg whites, salt, and the rest of the flour
Gradually mix in the remaining egg whites
Grease the cake pan or baking dish and bake in a hot oven for 10 minutes before reducing to a lower temperature
Fill with lemon gelatin, guava jam, cream cheese, or any other desired filling
Garnish with grated carrot, confectioner's sugar, or any other product of your taste or from your freezer
Cut the cake into two or more slices to fill
