2 packets of active dry yeast (30g)
7 1/2 tablespoons of warm water

6 eggs, slightly warmed in warm water

Dissolve the salt in cold water and the yeast in warm water
Set aside
Place the flour in a large bowl, make a depression, and add the liquid mixture, eggs, and melted butter with olive oil
Gently mix the flour with the liquids using your fingertips until a ball forms, adding a little more flour to prevent sticking
Grease another bowl and place the ball, turning it once to grease the top
Cover with a cloth and let rest for approximately 1 1/2 hours
While this is happening, prepare the filling: sauté all ingredients for a few minutes
Divide into 3 portions and set aside
Place the dough on a floured surface, cut it into 3 parts
Cover with a cloth and let rest for another 15 minutes
After this, open each dough ball into a rectangle or 2 circles (whatever shape you prefer)
For the rectangular sausage roll, place the filling in half of the dough, fold the other half over
Press the edges to seal well
For the round sausage roll, place the filling on one circle and cover with another
Press the edges to seal well
With a knife or scissors, make some decorative cuts on top to reveal the filling
Baste with beaten egg and bake in a preheated oven at 200°C for 40-45 minutes until golden brown and when lightly tapped with your palm it sounds hollow
Make 3 sausage rolls.
