2 packets of fresh yeast for bread (30 g)
1 tablespoon of salt
1 cup of milk
2 cups of water
1 tablespoon of panettone flavoring
3 eggs
6 tablespoons of butter
1/3 cup of chopped almonds
1/3 cup of fructose (type of sweetener)
1.1 kg of wheat flour
1 cup of black and white raisins

Mix in a blender, at low speed, the yeast and salt
Add the milk, water, and panettone flavoring, and mix again at low speed
Add the eggs and mix for a few seconds
Transfer this liquid to a stand mixer and add the butter
Turn on the stand mixer, at low speed, and add the chopped almonds mixed with the sweetener gradually
Mix until it becomes homogeneous and stop the motor
Add 1 kg of flour gradually and mix until it forms a sticky dough
Dust a clean surface with the remaining flour and place the dough
Start working the dough with your hands until it starts to come away from the surface and your hands
Divide the dough into four parts, and add 1/4 cup of raisins to each one
Work the dough for another minute and shape each mass into a panettone mold of 500 g
Bake in a medium oven until golden brown.
