Melt the butter in a bain-marie, then add the shredded cheese, anchovy paste, and seasonings
Stir until well combined
Add the heavy cream to the egg yolks and whisk into the mixture in the bain-marie, stirring constantly; when it has reached a smooth consistency, remove from heat and serve over toast.
