500g of cheddar cheese, grated coarse
2 tablespoons all-purpose flour
1 clove garlic, cut in half
2 cups dry white wine
Salt and black pepper to taste
Optional: 1/4 teaspoon ground nutmeg
3 to 4 tablespoons Kirsch or brandy
2 French breads, baguette or filone with crust, cut into chunks (each chunk should have a little crust)

Mix the cheese with flour
Rub the inside of a fondue pot with garlic
Pour in the wine and bring to a simmer over medium heat
Add the cheese by handfuls, stirring vigorously with a wooden spoon until all the cheese is melted
Season to taste with salt, black pepper, and optional nutmeg
Add the Kirsch or brandy
Serve hot over a candle warmer
Each guest serves themselves, spearing a chunk of bread on a fondue fork and dipping it into the melted cheese, stirring slightly
Let cool slightly before serving
