2 cups of beet leaves, cut into strips

Fry the garlic in oil for a few minutes
Add the beet leaves and fry for 1 minute
Add water and cook until almost completely evaporated
Place in two individual ramekins and crack 1 egg into each one
Put in a moderate oven preheated to 180°C until the egg is set
Sprinkle with salt and black pepper to taste
Serve 2 per person.
