Combine the corn with the remaining ingredients in a blender and blend well
Pour the mixture into greased mini muffin cups, filling each about 1/4 full
Bake in a hot water bath (200°F) preheated for about 1 hour or until a toothpick inserted into the center comes out clean
Unmold and serve with tender mango sauce, making 21 fritters.
