1 Wash the strawberries under cold running water and pat them dry with paper towels
Remove the stems and cut into quarters
Place three parts in a blender and blend until it forms a puree
2 Pour the mixture into a saucepan, add lemon zest, and mix well
Add honey and mix thoroughly
Dissolve cornstarch in water and add to the saucepan
Stir constantly over low heat until thickened
3 Remove from heat, distribute the mousse among four individual molds, and let cool
4 Refrigerate for four hours
Shape into cups and decorate with strawberry slices and mint leaves.
