Wash the strawberries with cold running water and pat them dry with paper towels
Remove all stems and divide into 4 parts
Place 3 parts in a blender and blend until smooth
Pour into a pan and add lemon zest
Carefully add honey and mix well
Dilute cornstarch in water and pour into the pan
Stir constantly and bring to a simmer
Cook without stopping to thicken
Remove from heat and distribute the cream obtained into 4 individual molds
Let it cool down
Chill in the refrigerator for 4 hours
Unmold onto plates and garnish with strawberry slices and fresh mint leaves.
