1 kg of chicken breast or thighs, cut into bite-sized pieces
3 cloves of garlic, minced
2 cups of chicken broth
2 tablespoons of soy sauce
4 stalks of celery, sliced
2 cups of dark beer, reduced to 1 cup
Caramelized onions
Parsley leaves, chopped
Salt to taste

Step 1: In a large bowl, combine all the ingredients and mix well
Step 2: Cover the bowl with plastic wrap and refrigerate for at least 12 hours or overnight
Step 3: Preheat your oven to high heat
Remove the chicken from the marinade and place it in a roasting pan
Step 4: Scrape off any excess fat that has formed on top of the chicken, and season with some of the reserved marinade
Step 5: Roast the chicken in the preheated oven until golden brown.
