Preheat the oven to 375°F

Wash the turkey in cold water and remove any giblets for making broth or stuffing

Rub the turkey with olive oil and season with salt and white pepper

Open up the breast of the turkey, being careful not to tear it

Place the turkey in a roasting pan and cover with aluminum foil

Roast the turkey for 2 hours or until it is cooked through

Remove the foil and baste the turkey with melted butter every 30 minutes

Mash the potatoes well and mix with milk, butter, herbs, salt, and white pepper

Serve alongside the roasted turkey or use to stuff the turkey after removing the aluminum foil.
