1 chicken or 1 pound of chicken
3 liters of water
1 diced onion
1 diced carrot
3 sprigs of parsley
2 tablespoons of chopped green scallions
salt and black pepper
2 tablespoons of chopped celery
2 tablespoons of chopped fresh cilantro
1/2 cup of uncooked white rice
1 chicken or 1 pound of chicken

Wash the chicken thoroughly and place it in a pot with 3 liters of water
Bring to a boil, then remove any excess fat from the surface
Cover and simmer for 30 minutes
Add the diced onion, carrot, parsley, and green scallions
Season with salt and black pepper to taste, and continue to simmer until the meat is tender
Remove the chicken from the pot and add chopped celery and fresh cilantro
Wash the rice and add it to the pot, simmering in low heat until the rice is cooked
Debone the chicken, cut the meat into small pieces, and return them to the pot
Serve hot, with 6 servings
