8 boneless, skinless chicken breasts
1 tablespoon of olive oil
1 minced garlic clove
1/2 cup of chopped onion
1/2 cup of optional chopped salted fish (if using)
1/2 cup of chopped green pepper
1 teaspoon of salt
1/8 teaspoon of black pepper
4 seedless, chopped tomatoes

Heat the olive oil in a skillet
Add the garlic, onion, salt, and green pepper
Cook over low heat for 15 minutes
Season the chicken with salt and pepper, then add it to the skillet
Cook for an additional 15 minutes
Cover and cook for 45 minutes
Remove the chicken from the skillet and place it on a warmed serving platter
Add the tomatoes to the skillet with a little water if needed
Cook for an additional 5 minutes and serve over the chicken.
