6 Polenghi-style melted cheese cubes

Preheat the oven to moderate temperature (180°C)
Rub the chicken inside and out with lemon juice
Season with salt
Spread a generous amount of butter inside and out, then put it in the oven for about 20 minutes
In separate, mash the Roquefort cheese with the cheese cubes until you get a paste
When the chicken is golden brown, remove it from the oven and fill it with the cheese paste
Pierce the bird with a fork to allow the filling to spread evenly
Put it back in the oven for another 20 minutes or until cooked through and the filling is melted.
